しば漬け仕込み最終日

今日はしば漬けの仕込み最終日です。
なすびと紫蘇の葉と塩を混ぜたものを樽に入れて重しを置いていくと、なすびの水分が出てきます。
この時の水分の色が大原の紫蘇の色でとても綺麗です。
毎年しば漬けの仕込みが終わると、もうそろそろ夏も終わりなんだなあ、と感じます。
